Scallop ingredients (serves 4)
- 1 1/2 pounds of dry-packed sea scallops
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons canola oil
Herb butter sauce ingredients (serves 4)
- 2 tablespoons chopped parsley
- 2 tablespoons chopped chives
- 1 teaspoon thyme
- 1/3 cup dry white wine
- 1 tablespoon chopped shallots
- 1 tablespoon white wine vinegar
- 3 tablespoons chilled butter (cubed)
- 1 pinch of salt
- 1 pinch of pepper
Step 1: Heat a large skillet over medium-high heat. Add canola oil and let heat up.
Step 2: Sprinkle scallops with salt and pepper. Add scallops to the pan.
Step 3: Let scallops cook for 3 minutes on each side. Remove and keep warm.
Herb butter sauce recipe
Step 1: Combine wine, shallots, and vinegar in a sauce pan and bring to a boil. Let cook for 5 minutes.
Step 2: Reduce heat to low. Add butter cubes 1 at a time, allowing them to fully melt before adding the next.
Step 3: Stir in parsley, chives, thyme, salt, and pepper.
Step 4: Spoon sauce over scallops. Serve and enjoy.
