Chicken Rollotini with Pesto and Mozzarella

Love chicken? Love pesto? Love mozzarella? If you’ve answered yes to all of these, then this chicken recipe is for you. I invented it one night when I had an excess of pesto sauce and it’s quickly turned into one of my favorites. Here’s what you’ll need.

Chicken Rollotini with Pesto and Mozzarella Ingredients: (Serves 2)

  • 1 large chicken breast (split into two)
  • 1 jar of pesto sauce
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • salt and pepper
  • 4 toothpicks

Step 1: Preheat oven to 450 degrees.


Step 2: Pound out chicken breasts into thin cutlets.

To do this, I covered the chicken with saran wrap and pounded it out with a heavy skillet.  This is a great stress reliever, just make sure not to hit the chicken too hard. Too much force will create rips and cause uneven cooking.

Step 3: Spread pesto sauce on the top of the chicken breasts and then sprinkle with mozzarella cheese.

Step 4: Start at one end of the cutlet and roll the chicken lengthwise into a log. Stick with toothpicks to keep from unrolling.

Step 5: Season chicken with salt, pepper and olive oil.

Step 6: Place chicken rolls on a greased baking sheet and bake for 30 minutes.
