Cheeseburger Pasta BakeToday was a long day and to top it off, I haven’t been food shopping in a week.  These are the nights every cooking college student dreads.

The typical starting point for my no-food-left dinners is the freezer. In my freezer, I found three boxes of English muffins, sugar-free ice pops, and, in the back right corner, two frozen hamburger patties.

Since ice pops aren’t the best dinner base, I started with the hamburger. I added a few other pantry ingredients and came up with a new and satisfying meal.

Cheeseburger Pasta Bake

Ingredients: (Serves 2)

  • 2 hamburger patties
  • half a box of pasta (Macaroni or Rotini)
  • 1/2 cup of tomato sauce
  • 1/8 cup of diced cheddar cheese
  • 1/2 cup of steam-in-bag corn
  • 1 mini dill pickle, chopped
  • 2 tablespoons of olive oil
  • salt, black pepper, and Cayenne pepper

Step 1: Boil water and cook the pasta.

Step 2: Microwave steam-in-bag corn.

Step 3: In a large skillet, heat olive oil on medium-high heat. Add hamburger patties and season liberally with salt, black pepper, and Cayenne pepper. Break up burger patties and let brown.

Step 4: Once the meat has browned, turn the burner to low heat and add the tomato sauce. Let sauce and meat simmer for 3 minutes.

Step 5: Add cheese and stir until the cheese melts into the sauce.

Step 6: Take the skillet off the heat and mix in corn and cooked pasta.

Step 7: Top with chopped pickles and enjoy!

I was super pumped by my creativity in my pantry dinner, until I realized I basically made fresh Hamburger Helper (oops). Either way, it was delicious! Next time you’ve got some hamburger meet to use, give this recipe a try.

    Love your creativity. When I was in college, I did what you do: use whatever food was available and turn it into an edible dish. I also found I could cook for others: get them to buy the ingredients, use their facilities, cook and get to eat. Win for all. Congrats on staying in school and not existing on take out!

      Thanks so much! Cooking in a rinky-dink apartment on a hectic schedule was certainly a challenge, but that all added to the fun!
