Goat Cheese Stuffed Pork Chops with Brown Sugar Pears

Pears PorkSome nights, I’m in the mood to make something fancy. Luckily, I’ve learned that fancy doesn’t have to break the bank or take longer than 30 minutes. Here’s my easy, eight ingredient “Fancy Friday” meal.

Goat Cheese Stuffed Pork Chops

Ingredients: (Serves 2)

  • 2 pork chops
  • 1/4 cup of goat cheese
  • 2 tablespoons of olive oil
  • salt and pepper to taste

Step 1: Cut pork chops lengthwise to create a pocket in the meat. No not slice all the way through to ensure the cheese remains in the chop.

Step 2: Season liberally with salt and pepper.

Step 3: Add olive oil to a medium skillet and turn the stove to medium-high heat.

Step 4: Sear the pork chops on both sides (5 minutes a side or until desired doneness). Take off the heat and let rest.

Butter and Brown Sugar Pears

Ingredients: (Serves 2)

  • 2 ripe pears
  • 2 tablespoons of brown sugar
  • 1 tablespoon of butter

Step 1: Slice pears lengthwise.

Step 2: Heat butter in a medium saucepan on medium-low heat.

Step 3: Add pears, stir then cover with a lid for 5 minutes, mixing occasionally.

Step 4: Once pears begin to soften, sprinkle with brown sugar. Stir and cover for 3 minutes then remove from heat.

Step 5: Serve over pork chops and enjoy!

Final

This meal looks impressive, but is actually super easy. It’s perfect to have in your back pocket when you need to show off your cooking chops. Also, the pears can double for dessert. Just spoon them over ice cream and you’ll look like a true gourmet.
