Handmade Calzones

Calzone DinnerI found myself cleaning out my freezer and stumbled across two balls of frozen pizza dough. I threw them in the freezer months ago and, like most things that go in the freezer, I completely forgot about them.

Not one to waste food, I decided to maximize my freezer find. Pizza appeared on the menu a few nights previous, so I hoped to make something slightly different. Therefore, I cooked up the cousin of the pizza, the calzone.

Ricotta, Mozzarella and Pepperoni CalzonesCalzone Ingredients

Ingredients: (Makes 2 calzones)

  • 1 (14 inch) round of frozen and thawed pizza dough
  • 1/2 cup of ricotta cheese
  • 1/2 cup of shredded mozzarella
  • 1 bag mini pepperonis
  • 1 teaspoon oregano
  • 1 teaspoon Cayenne pepper flakes
  • 2 tablespoons olive oil
  • 2 tablespoons Parmesan cheese
  • Pizza sauce

Step 1: Preheat oven to 450 degrees.

Step 2: Split pizza dough in half. Flour your work surface and roll out dough into two separate circles. Don’t worry if they’re not perfectly round.

Calzone DoughStep 3: Spread ricotta cheese over one half of the dough. Make sure to keep half an inch of dough around the edges. Sprinkle with mozzarella cheese and top with oregano and Cayenne pepper.

Calzone Mozzarella RicottaStep 4: Fold the dough over and seal the edges together using a fork to crimp the sides.

Calzone Fold OverStep 5: Move the calzones to a greased cookie sheet. Brush the top of the calzones with olive oil. Sprinkle with Parmesan cheese. Finally cut two or three once-inch slits in the top.

Calzone with olive oilStep 6: Place in the oven and bake for 10-15 minutes. Until the top is golden brown.
