Love chicken? Love pesto? Love mozzarella? If you’ve answered yes to all of these, then this chicken recipe is for you. I invented it one night when I had an excess of pesto sauce and it’s quickly turned into one of my favorites. Here’s what you’ll need.
Chicken Rollotini with Pesto and Mozzarella Ingredients: (Serves 2)
- 1 large chicken breast (split into two)
- 1 jar of pesto sauce
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- salt and pepper
- 4 toothpicks
Step 1: Preheat oven to 450 degrees.
Being a college student, there’s not always a lot of time to make dinner. Some nights I only have 30 minutes to cook and eat, so I’ve come up with a handful of dinners that are fast, easy and delicious. Here’s one of my favorite quick-fix meals that I use time and time again.
Chicken Pesto Pasta with Vegetables Ingredients: (Serves 4)
Chicken pesto pasta with vegetables
- 1 Box of pasta
- 2-4 Chicken breasts
- 1 Steam-in-bag of frozen mixed vegetables
- 1 Jar pesto sauce
- 1 Tablespoon olive oil
- Salt and pepper
Step 1: Boil 1 pot of water. Add pasta. Cook until al dente.
Step 2: Cut chicken breasts into bite sized pieces. Add olive oil to a saute pan on medium-heat. Add chicken and season with salt and pepper. Cook through.
Step 3: Steam frozen vegetables in the microwave.
Step 4: Drain pasta, add cooked chicken and vegetables. Stir in pesto sauce.
Step 5: Enjoy!
This is a one-bowl dinner that takes under 30 minutes to put together. Give it a try and let me know what you think!
